New York Style Cheesecake
| graham cracker crumbs |
1 lb. | small curd cottage cheese |
2 8 oz. packages | cream cheese (softened) |
1 1/2 cups | sugar |
4 | eggs |
1 1/3 cups | corn starch |
2 T. | lemon juice |
1 tsp. | vanilla |
1/2 cup | melted margarine |
1 pint | sour cream |
Grease 9x3 inch springform pan; dust with graham cracker crumbs.
Sieve cottage cheese into large mixing bowl.
Add cream cheese.
Mix at high speed until smooth and creamy.
Beat in sugar and then eggs.
With mixer on low speed, beat in starch, lemon juice, and vanilla.
Beat in margarine and sour cream until smooth.
Pour into pan.
Bake in 425° in oven for 20 minutes or until firm around the edge.
Turn off oven.
Let cake stand in oven for 2 hours.
Remove and chill.
Remove side of pan.
If desired, cover with fruit glaze.
